Egg Loaf

We’ve got a breakfast casserole that has all the hallmarks of a certified go-to: a simple list of ingredients, easy prep, and tastes great. I wish I had gave it a better name but it’s simple and accurate and honestly is pretty fun to say. Recommend making this the day before you want it to let it sit and come together in the fridge overnight, then popping it in the oven the next morning. Reheats extremely well so makes a great meal prep as well for breakfast.

INGREDIENTS

  • 6 slices of bread
  • 1 lb pork sausage
  • 1/2 lb grated cheese
  • 10 eggs, beaten
  • 2 cups of milk
  • 1/2 teaspoon salt
  • 1/2 teaspon dry mustard
  • 1/4 cup of butter, melted

STEPS

  • Brown and drain the fat from the pork sausage
  • Cube the 6 slices of bread
  • Mix together the pork & bread
  • Place in a well greased 9×13 inch pan
  • Sprinkle the mixture with cheese
  • Mix together eggs, milk, salt and mustard
  • Pour over the bread and meat
  • Pour melted butter over all of it
  • Bake at 350° for 1 hour
