Chicken Caesar Sandwich

There are few things as pure as a caesar salad. When done well it hits all the right notes and doesn’t rub your face in it. This sandwich is not that. It is the Donald Trump of caesar salads. It’s loud, gaudy, and might call you a slur. It takes the classic Caesar’s elegance, slaps it between two slices of toasted & buttered bread, a garlic confit shmeared across it along with breaded and fried chicken cutlets. Subtle? Not a chance. But damn, it’s delicious. Also be prepared this one takes some time so work on it the day before!

INGREDIENTS

  • 1 pack of chicken breast (about 1-1.5 lbs)
  • breading of your choice
  • 3 Eggs
  • Flour
  • 2 heads of romaine lettuce
  • Caesar dressing
  • Garlic Confit (our recipe here you lazy bum)
  • Butter
  • Parmesan Cheese
  • Sub bread

STEPS

  • Preheat oven to 325
  • Pound out your chicken breasts until flat
  • Get 2 bowls and a plate, put the flour in one bowl, beaten eggs into the next, and breading spread out on the plate
  • Cover the flat chicken in flour, dip into the eggs, then entirely cover in the breading
  • Add butter and oil to a pan and heat up until melted on medium heat
  • Place the chicken down and leave until golden brown then flip and do the same. You should only need to flip once so let that thing sizzle. If you feel like its gonna burn, just turn the heat down. Fight the urge to flip!
  • Make your caesar salad, combining chopped up romaine, caesar dressing, and parmesan cheese
  • Take your sub rolls and cut open. Coat both sides with butter and spread that garlic confit all up in there
  • Place in oven until toasted to your liking
  • Build your sammie and top with more parm if you like that vibe
  • You’re done!
