This is shamelessly taken from Gordon Ramsey. No reason to re-invent the wheel when a professional chef has already done it for you; I owe you, Gordon. It’s relatively simple but there are a bunch of steps so make sure you give yourself a good chunk of time to make this. You need a quick dinner hit up Taco Bell, this isn’t the one for you. But if you have time and like a hearty, well balanced dish, you’re in the right place and you’re about to have a good time.
INGREDIENTS
- 2 lb ground beef
- 1 onion
- 2 carrots
- 1 celery stick
- 3 cloves of garlic
- 1 tbsp tomato paste
- 1 branch rosemary
- 1 branch of thyme
- 1/2 cup red wine
- Enough beef broth to cover beef
- 5-6 potatoes
- 1/4 cup butter
- Shredded cheese
- 1/2 heavy cream
- 3 egg yolks
- Parmesan cheese
STEPS
- Preheat oven at 400 and start boiling a pot of water
- Dice onion, carrot, celery, set aside
- Dice and peel potatoes, set aside
- Brown meat, adding salt and pepper
- Add onion, carrot, celery, garlic, tomato paste and mix through
- Cook for 5 mins before adding red wine and rosemary & thyme
- Cook for 5 mins before adding enough beef broth to cover the meat
- Simmer until reduced (about 20 mins)
- While reducing get started on the potatoes, add to boiling pot
- Once boiled through drain and add to bowl
- Add butter, shredded cheese, heavy cream, and 3 egg yolks
- Mix until smooth, add salt & pepper to taste
- Add meat to bottom of oven safe 9×13 dish
- Cover meat with mashed potatoes
- Drag fork across top of the mashed potatoes to make it look cool
- Shred parmesan across the top before putting in oven for 15 min until golden brown
