So simple and so good. This is a good one if you’re working from home to start on your lunch and have it be ready by the end of your work day. Or just be a bum and skip work and do it, I’m not your boss or a snitch. If you don’t have Goya Sazon (the “y achiote” variety) I highly recommend, easy way to add a burst of flavor.
INGREDIENTS
- 1 boneless beef chuck roast (about 4 lbs)
- 2 tbsp taco seasoning (Personal rec: a mix of normal taco seasoning & Goya sazon)
- corn tortillas
- Finely chopped onion
- Finely chopped cilantro
- Guacamole (our recipe here, you lazy bum)
STEPS
- Preheat oven to 325
- Season roast all sides with salt, pepper, & taco seasoning
- Add to baking dish & cover with foil
- Bake for 1 hour per lb of meat
- Remove from oven and shred into large chunks using 2 forks
- Toss the shredded meat into the rendered fat of the baking dish
- Place back in oven for 20-25 mins uncovered until the edges are crispy
- In a saucepan, heat up your tortillas
- You’re done! Fill with meat, guac, onion, and cilantro while wondering why you don’t make it every day until you die
